Authentic Mexican food recipes are usually favorites, but they aren't always healthy. Turn this beloved cuisine into healthy eating with these easy Mexican recipes.

Many the world over are quick to declare their love for traditional Mexican cuisine, but its rich ingredients are not always conducive to healthy eating habits. Those who are on a diet or just looking to live a healthier life may think that they have to write off Mexican food altogether, but that is untrue. There are ways to make traditional Mexican cuisine healthy. Try one of these delicious and nutritious Mexican recipes.

Salmon Soft Tacos

These soft tacos are made with healthy grilled salmon rather then fish fried in oil or lard.

Ingredients

  • 4 4-ounce salmon fillets, about 1-inch thick with the skin on
  • 1 tablespoon lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1/8 teaspoon ground pepper
  • 1 tablespoon ancho chile powder
  • 1/4 teaspoon salt
  • 8 corn or flour tortillas, warmed

Cooking Directions

  1. Preheat the grill to a medium heat.
  2. Combine the lime juice, chile powder, olive oil, salt and pepper in a small bowl.
  3. Liberally cover the salmon filets with the spice mixture.
  4. Grill the salmon, skin side down, until it is just cooked.
  5. Cut the cooked salmon filets into two pieces and remove the skin.
  6. Place the fish in the tortillas and serve with Mexican condiments such as fresh pico de gallo or a citrus salsa made with fruit.

Easy Chile Relleno Casserole

This recipe is not only healthy, but easy as it takes only minutes to prepare and pop in the oven.

Ingredients

  • 1 1/2 cups nonfat milk
  • 1 cup shredded reduced-fat Cheddar cheese
  • 2 4-ounce cans diced green chiles, drained
  • 4 thinly sliced scallions
  • 3/4 cup frozen corn, thawed and drained
  • 4 eggs
  • 6 egg whites
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 400°F and coat a casserole dish with cooking spray or olive oil. Place on a baking sheet.
  2. Place the chiles, corn and scallions in the bottom of the dish.
  3. Top the mixture with the cheddar cheese.
  4. Whisk together the milk, eggs and egg whites and pour over the mixture in the casserole dish.
  5. Bake until the top begins to brown and the eggs are fully cooked, about an hour.

This recipe can also be made in indevidual servings using 6oz or 10oz heat proof ramekins.

These recipes make it easy for any Mexican food lover to stick they their diet or healthy eating habits.
