Authentic Mexican Taquitos Recipe

These easy Mexican appetizers are made with fast cooking ground beef which makes them quick to prepare.

Ingredients

  • 24 corn tortillas
  • 2 pounds lean ground beef
  • 4 tablespoons oil
  • 2 seeded and diced jalapenos
  • 1 large diced red onion
  • 1 red julienned bell pepper
  • 1 teaspoon ground cumin
  • 2 tablespoons minced garlic
  • 1 tablespoon dried oregano
  • 2 tablespoons minced fresh cilantro leaves
  • Salt and pepper
  • 3 ounces tequila (optional)
  • The juice of 1 lime
  • Canola oil for frying

Cooking Directions

  1. In a sauté pan heat the olive oil over medium heat.
  2. Add the jalapenos, onion, bell pepper, garlic, and ground beef to the hot oil and sauté until the ground beef is almost fully cooked and the onions and bell pepper are soft.
  3. Add the oregano and the cumin.
  4. Stir in the tequila and the lime juice and simmer until almost all of the liquid has evaporated.
  5. Roll about 4 tablespoons of the beef filling in the tortillas and secure each with a toothpick.
  6. In a deep skillet heat ½ an inch of canola oil to 350°F.
  7. Add the uncooked taquitos to the oil with the toothpick secured side facing down and deep fry until the tortilla is golden brown on both sides. They may need to be flipped.
  8. Set on a plate covered with a paper towel to drain.
  9. Serve with fresh homemade guacamole. (Recipe follows)

Guacamole Dipping Sauce Recipe

This easy guacamole recipe blends traditional flavors with unexpected ingredients.

Ingredients

  • 3 peeled, seeded and sliced ripe avocados
  • 1seeded and diced jalapeno
  • 2 cloves of garlic
  • The juice of 1 lime
  • 4 tablespoons sour cream
  • 1/2 bottle of your favorite Mexican beer (Corona, Dos Equis, Tecate, etc)
  • 1/4 cup diced tomato
  • 1/4 cup diced red onion
  • ¼ cup feta cheese
  • Small handful cilantro leaves, about 1/4 cup
  • Salt and pepper

Cooking Directions

  1. Place the avocados, jalapeno, garlic, lime juice, sour cream and beer into a food processor and blend until smooth.
  2. Stir in the tomato, onion, cilantro and feta cheese.
  3. Salt and pepper the guacamole to taste.

Never settle for chips and dip again. These authentic taquitos along with the homemade guacamole dipping salsa make a great Mexican appetizer.
